Biroldo of Garfagnana

Among the most original products there is the so-called biroldo, a Slow Food Presidium, a cold cut made with pork meat and blood, flavored with a mixture of spices and fennel seeds, characteristic of Garfagnana. Biroldo of Garfagnana is a loaf-shaped sausage with a diameter of about 20 cm. It has a dark red color, a rather soft texture, and an intense perfume of spices and aromas.
It is produced with fragments of some parts of the pork mixed with blood.
